9.1 Minestrone vegetariano
Para 4 personas
Ingredientes:
1,8 l de caldo de verdura (caliente)
800 g (2 latas) de tomate triturado
425 g (1 lata) de alubias rojas
2 cebollas
2 troncos de apio
3 zanahorias
200 g de judías verdes tiernas de lata o envase de vidrio
1 calabacín pequeño
2 dientes de ajo
1/2 manojo de perejil fresco
2 cucharaditas de orégano seco
1 cucharadita de sal
1/2 cucharadita de tomillo seco
Pimienta negra molida fresca
75 g de pequeños macarrones (chifferi)
30 g de queso parmesano recientemente rallado
Preparación:
Lavar el apio, las zanahorias y el calabacín y cortar en trozos finos. Pelar las cebollas y el ajo y picarlos.
Añadir el caldo de verduras, los tomates, las alubias rojas, las judías verdes y los ingredientes
preparados a la olla de cerámica (4). A continuación, añadir las hierbas aromáticas secas al minestrone
y condimentar con sal y pimienta según su gusto personal.
Si utiliza judías verdes frescas, se recomienda precocinarlas durante unos 20 minutos
antes de añadirlas a la olla de cocción lenta.
Las hierbas frescas pierden su sabor si se cocinan durante mucho tiempo. Por lo tanto,
añada el perejil al final.
Cerrar la tapa (2) y dejar cocinar el minestrone durante 6 horas en la posición LOW.
Cuando el minestrone esté listo, caliente agua salada hasta ebullición en una olla separada y hierva la
pasta según las instrucciones del paquete.
