9.1 Vegetariánska minestra
4 porcie
Ingrediencie:
1,8 l zeleninového vývaru (teplého)
800 g (2 konzervy) nasekaných paradajok
425 g (1 konzerva) fazúľ
2 cibule
2 zelerové vňate
3 mrkvy
200 g baby zelenej fazule z pohára alebo
konzervy
1 cuketa
2 strúčiky cesnaku
1/2 zväzok čerstvého petržlenu
2 čaj. lyžičky sušeného oregana
1 čaj. lyžička soli
1/2 čaj. lyžičky sušeného tymianu
Čerstvo namleté čierne korenie
75 g kolienkových cestovín
30 g čerstvo postrúhaného parmezánu
Postup:
Umyte zeler, mrkvy a cuketu a jemne ich nakrájajte. Olúpte cibule a cesnak a jemne ich nakrájajte.
Pridajte zeleninový vývar, paradajky, fazuľu, zelenú fazuľu a pripravené ingrediencie do keramickej
nádoby (4). Potom pridajte do minestry sušené bylinky a okoreňte soľou a čiernym korením podľa chuti.
Ak používate čerstvú zelenú fazuľu, predvarte ju na približne 20 minút a potom pridajte do
pomalého hrnca.
Čerstvé bylinky strácajú vôňu pod dlhom varení, preto na konci pridajte len čerstvý petržlen.
Zatvorte veko (2) a varte minestru po dobu 6 hodín v polohe LOW.
Keď je minestra hotová, nechajte zovrieť osolenú vodu a v samostatnom hrnci a uvarte cestoviny podľa
pokynov na balení.
Umyte a jemne nasekajte petržlen.
Pridajte uvarené cestoviny a petržlen do pripravenej minestry a jemne posypte čerstvo nastrúhaným
parmezánom.
9.2 Bolonská omáčka
4 porcie
Ingrediencie:
1 cibuľa
1 strúčik cesnaku
1 mrkva
100 g údenej slaniny
1-2 zelerové vňate
500 g zmesi mletého mäsa
2 pol. lyžice masla
1/8 l červeného vína
200 ml vývaru
400 g (1 konzerva) lúpaných/celých
paradajok
500 g passata
Soľ, čierne korenie, cukor, oregano
