Oksekød i karry
Ingredienser:
3,5 liter 6,5 liter
2 spsk. 5 spsk. Olie
2 mellemstore 2 store Madæbler, skrællede, udkernede
og i skiver
2 store 4 store Løg, hakkede
700 g 1,5 kg Steak til gryderetter, i tern
3 tsk. 5 tsk. Karrypulver
3 spsk. 5 spsk. Hvidt mel
400 ml 1 liter Oksekødsbouillon
3 spsk. 5 spsk. Mango-chutney
75 g 125 g Sultana-rosiner
200 g 400 g Tomater dåse, hakkede
2 spsk. 2 spsk. Citronsaft
Salt og peber efter smag
Metode:
1 Steg æble og løg på en pande, til det er blødt. Dæk kødet i
krydret mel, læg det på panden, og steg til det er let brunt.
2 Rør bouillonen i og bring det i kog. Tilsæt de resterende
ingredienser og få det til at
simre igen.
3 Overføres til gryden og dækkes til med låget. Koges i ca. 4-7
timer.
4 I slutningen af tilberedningstiden kan det være nødvendigt at
fortykke saucen.
Bolognesesauce
Ingredienser:
3,5 liter 6,5 liter
700 g 1 kg Hakket oksekød
1 stort 2 store Løg, hakkede
3 4 Selleristave, i tynde skiver
1 2 Fed hvidløg, knust
3 spsk. 5 spsk. Tomatpuré
1 spsk. 3 spsk. Mel
400 g 800 g Tomater dåse
(inklusive saften)
250 ml 400 ml Oksekødsbouillon
125 g 200 g Svampe, i skiver
1 tsk. 1 tsk. Blandede krydderurter
Salt og peber efter smag
Metode:
1 Brun nænsomt hakkekødet på en pande uden at tilsætte fedtstof
eller olie.
2 Når der løber fedt fra kødet, skal der tilsættes løg, selleri og
hvidløg.
3 Steg det i nogle minutter, og tilsæt derefter tomatpuré.
4 Bland noget af tomatsaften med melet for at lave en jævn,
flydende blanding. Tilsæt kødet med de resterende tomater og
saften, og bring det i kog, mens du rører konstant rundt, indtil
blandingen er tyk.
5 Tilsæt de resterende ingredienser og bland godt.
6 Overføres til gryden og dækkes til med låget. Koges i ca. 3-8
timer.
Bemærk: Der kan blive dannet en let “skorpe” af brunt kød
foroven. Den forsvinder snart, hvis den røres ind i sovsen.
