Gemüsegerichte / Piatti a base di verdure
Gemüseplatte
mit Sahne-Sauce
(für einen Dampfkorb)
Zutaten für 4 Portionen
200 g Brokkoli
200 g Blumenkohl
200 g Romanesco
Mandelstifte
Für die Sauce:
100 g saure Sahne
2 EL Zitronensaft
Salz, Pfeffer
Flüssigkeitsmenge im Bodengefäß:
minimale Füllstandsmarkierung
1.
Brokkoli, Blumenkohl und Roma nesco
waschen und in Röschen teilen.
2.
Beide Trennwände in den Dampfkorb
einsetzen. Den Blumenkohl in die mittlere,
den Brokkoli und den Romanesco in die
beiden äußeren Kammern des Dampf -
korbes füllen.
3.
Mandelstifte über den Brokkoli streuen
und alles zusammen 20 Minuten garen.
4.
Zwischendurch für die Sauce saure
Sahne mit Zitronensaft, Salz und Pfeffer
gut verrühren.
5.
Nach der Garzeit das Gemüse getrennt
auf einer vorgewärmten Platte anrichten. 3
bis 4 EL Gemüsebrühe aus der Auffang -
schale unter die Sahne-Sauce rühren.
Sauce über den Blumenkohl und Roma -
nesco gießen.
Bei der hier gewählten Garzeit bleibt das
Gemüse knackig, bißfest und besonders
schmackhaft. Diese Gemüseplatte paßt
sehr gut zu gekochtem Rindfleisch. Als
Getränk empfiehlt sich ein trockener
Rotwein.
Piatto misto di verdure
(con una vaschetta di cottura)
(per 4 persone)
200 g di broccoli
200 g di cavolfiore
200 g di broccolo nero
mandorle a scaglie
Salsa:
100 g di panna acida
2 cucchiai di succo di limone
sale, pepe
Quantità di acqua da versare nella base:
fino al livello minimo

Lavate i broccoli, il cavolfiore e i broc-
coli neri e tagliateli a pezzetti.
2.
Inserite entrambi i divisori nella
vaschetta per la cottura a vapore. Dis po -
nete il cavolfiore nel comparto centrale, i
broccoli e i broccoli neri a pezzetti rispetti-
vamente nei comparti a destra e a sinistra.
3.
Cospargete i broccoli con le mandorle
a scaglie. Fate cuocere tutto insieme per
20 minuti.
4.
Nel frattempo unite alla panna acida il
succo di limone, il sale e il pepe.
5.
Ponete le verdure, separatamente, su
un piatto che avrete preriscaldato. Unite
3-4 cucchiai di acqua di cottura, prelevan-
dola dalla vaschetta raccogligocce, alla
salsa precedentemente preparata e versate
sul cavolfiore e sui broccoli neri.
I tempi di cottura previsti per le verdure
permettono di lasciarle al dente ed ancora
particolarmente saporite.
Suggerimento: Ideale come contorno per
carni di manzo, accompagnate da vino
rosso secco.
