Gemüsegerichte / Piatti a base di verdure
Moussaka
(für einen Dampfkorb)
Zutaten für 2 Portionen
500 g Auberginen
2 EL Zwiebeln
1 Bund Petersilie
500 g enthäutete Tomaten
500 g Hackfleisch, gemischt
Öl zum Braten
Salz, Pfeffer
100 g Semmelmehl
100 g Parmesankäse
Flüssigkeitsmenge im Bodengefäß:
maximale Füllstandsmarkierung

Zwiebeln und Petersilie getrennt – zum
Beispiel im Zerkleinerer eines Braun Stab -
mixers – fein hacken. Die Tomaten mit dem
Braun Stabmixer pürieren (oder durch ein
Sieb passieren).
2.
In einer Pfanne Hackfleisch und
Zwiebeln in heißem Öl anbraten. Tomaten
und Petersilie dazugeben, mit Salz und
Pfeffer abschmecken und einige Minuten
dünsten.
3.
Auberginen waschen und putzen. Der
Länge nach in Streifen schneiden.
4.
Den Boden der Reisschale mit Auber -
ginen auslegen, mit Semmelmehl bestreu-
en und die Hackfleischmasse darüber
schichten.
5.
Obenauf die restlichen Auberginen
legen und mit dem Parmesankäse be -
streuen. Die Reisschale in den Dampfkorb
einsetzen und 40 Minuten garen.
6.
Das Moussaka vorsichtig mit einem
Pfannenheber aus der Reisschale heben
und auf einer vorgewärmten Platte anrich-
ten.
Nach Belieben noch etwas Parmesan über
das Moussaka streuen.
Moussaka
(con una vaschetta di cottura)
(per 2 persone)
500 g di melanzane
2 cucchiai di cipolla
1 manciata di prezzemolo
500 g di pomodori senza buccia
500 g di carne trita mista
olio per friggere
sale, pepe
100 g di pane grattugiato
100 g di parmigiano grattugiato
Quantità di acqua da versare nella base:
fino al livello massimo

Tritate finemente le cipolle ed il prezze-
molo e passate i pomodori. Per fare il tutto
più velocemente e con risultati più omo -
genei potete utilizzare Braun Minipimer e
l’accessorio tritatutto.
2.
Fate soffriggere la carne trita e la
cipolla. Aggiungete i pomodori ed il
prezzemolo, insaporite con sale e pepe
e fate rosolare per qualche minuto.
3.
Lavate e pulite le melanzane; tagliatele
a strisce per la lunghezza.
4.
Disponete le melanzane a strati sul
fondo del recipiente per il riso e cosparge-
tele dapprima con il pane grattugiato e in
seguito con il composto di carne trita.
5.
Sovrapponete le melanzane restanti e
cospargete con il parmiggiano grattugiato.
Inserite il recipiente nella vaschetta per la
cottura a vapore. Fate cuocere per 40
minuti.
6.
Sollevate con attenzione la moussaka
dal recipiente e ponetela su un piatto che
avrete preriscaldato.
A piacere, potrete cospargere la moussaka
con altro parmigiano prima di servire.
