Gemüsegerichte / Piatti a base di verdure
Polenta mit Chinakohl
(für einen Dampfkorb)
Zutaten für 4 Portionen
1 l Fleischbrühe, warm
250 g Maisgrieß
Salz, Pfeffer
1 kleiner Chinakohl
1 gehackte Zwiebel
10 g Butter
2 EL gehackte Kräuter nach Wahl
Flüssigkeitsmenge im Bodengefäß:
minimale Füllstandsmarkierung

Die warme Fleischbrühe in die Reis -
schale gießen. Maisgrieß in die Fleisch -
brühe einrühren. Salzen und pfeffern nach
Bedarf.
2.
Die Reisschale in den Dampfkorb
setzen und 20 Minuten garen.
3.
Inzwischen die großen Blätter vom
Chinakohl trennen, waschen und die harten
Blattenden entfernen. Längs zerteilen. In
einer Pfanne die gehackte Zwiebel in
Butter anbraten.
4.
Nach der Garzeit die Polenta in einer
Servierschale abwechselnd mit dem China -
kohl schichten.
5.
Zum Schluß angebratene Zwiebeln
über die Polenta geben, mit den Kräutern
bestreuen und sofort servieren.
Die Polenta nach diesem Rezept soll weich
und cremig bleiben.
Polenta con cavolo cinese
(con una vaschetta di cottura)
(per 4 persone)
1 l di brodo di carne caldo
250 g di farina di mais per polenta
sale, pepe
1 cavolo cinese piccolo
1 cipolla tritata
10g di burro
2 cucchiai di erbe tritate
Quantità di acqua da versare nella base:
fino al livello minimo

Versate il brodo di carne caldo nel
recipiente per il riso. Aggiuntete la farina
di mais, sale e pepe a piacere.
2.
Inserite il recipiente per il riso nella
vaschetta per la cottura a vapore e fate
cuocere per 20 minuti.
3.
Staccate dal cavolo le foglie grosse
e lavatele, togliendone le estremità dure.
Tagliate a strisce nel senso della lun -
g hezza. Fate soffriggere in una padella la
cipolla con il burro.
4.
In un recipiente disponete la polenta
a strati alternandola con le foglie di
cavolo.
5.
In ultimo cospargete la polenta con
il soffritto di cipolle e le erbe tritate e
servite.
La polenta, preparata con questa ricetta,
deve rimanere cremosa e molle.
