Scholrolletjes met groenten
en Aziatische vinaigrette
20 g verse gemberwortel
4 el raapolie
2 tl sesamzaadolie
2 el sojasaus (mild)
¼ tl sambal oelek
1-2 tl honing
2 el Thaise vissaus
3 el sesamzaad
250 g peultjes
150 g prei (het witte
uiteinde)
125 g worteltjes
8 scholfi lets (60 g per
stuk)

Schil de gemberwortel en rasp hem fi jn. Knijp de
gember in uw hand uit en vang het sap op in een
kom. Roer de raapolie, sesamzaadolie, sojasaus,
sambal oelek, honing en de Thaise vissaus erdoor.
Rooster de sesamzaadjes in een pan zonder olie. Voeg
de helft van de warme geroosterde sesamzaadjes bij
de vinaigrette. Houd de rest van de sesamzaadjes
apart voor de garnering.
Maak de peultjes schoon. Verdeel ze over de
geperforeerde plaat.
Maak de prei schoon en schraap de worteltjes. Snijd
ze in dunne reepjes van 4 cm lang.
Leg de scholfi lets op een snijplank met de witte kant
onder. Halveer de fi lets in de lengte en bestrooi ze
met zout. Verdeel de groentereepjes erover en rol het
breedste uiteinde op tot de punt. Leg de rolletjes op
de peultjes op de geperforeerde plaat.
Zet de geperforeerde plaat in de oven en
plaats de opvangbak eronder. Stoom de vis
met het stoomprogramma op 100°C gedurende
15-20minuten. Leg de scholrolletjes en de peultjes
op borden, besprenkel ze met de vinaigrette, garneer
ze met geroosterde sesamzaadjes en serveer.
