Pozor! Nikada ne kuhajte bez dovoljno tekućine
i obratite pozornost da tekućina nikada u potpu-
nosti ne ispari. Kod nepridržavanja može doći do
zagorijevanja kuhane namirnice, do oštećenja
lonca i plastičnih drški.
4. Kuhanje s loncem za brzo kuhanje
4.1. Općenito
U ovom loncu se hrana kuha pod pritiskom, tj. pri
temperaturama od preko 100 °C. Tako se vrijeme
kuhanja smanjuje do 70 %, što je znatna ušteda
energije. Kratkim kuhanjem u pari u velikoj mjeri
čuvaju se miris, ukus i vitamini.
4.2 Kuhanje s umetkom
Već prema veličini lonca možete kuhati
s umetkom (12) i podmetkom (13).
Umetak i podmetak možete kupiti kao pribor
u specijaliziranoj trgovini (vidjeti »Pribor
i zamjenski dijelovi« na omotu).
4.3 Zagrijavanje
Zatvoreni, napunjeni lonac postaviti na izvor
topline i podesiti na najvišu razinu energije.
Kroz automatsko kuhalo (9), koje je istovremeno
i sigurnosni ventil, tijekom zagrijavanja izlazi zrak,
sve dok se ventil čujno ne zatvori i ne dođe do
podizanja pritiska.
Signal kuhanja (1) raste, žuti prsten pritiska i oba
narančasta prstena kuhanja postaju vidljivi (J).
Pravovremeno i dovoljno smanjite priliv energije,
tako da narančasti prsten kuhanja još ostane
vidljiv.
4.4 Vrijeme kuhanja
Vrijeme kuhanja počinje tek kada je prsten kuhanja
sasvim vidljiv. Pazite, da položaj prstena ostane sta-
bilan. Sukladno tome regulirajte dotok energije.
Ako signal kuhanja (1) padne ispod željenog na-
rančastog prstena kuhanja, izvor topline morate
ponovno pojačati.
Vrijeme kuhanja se tako nešto povećava.
Ako signal kuhanja (1) poraste preko drugog
narančastog prstena kuhanja, nastaje previsoki pri-
tisak pare koji preko glavnog ventila (3) na ručki
poklopca čujno izlazi van.
Lonac skinuti ploče štednjaka i sačekati dok
se signal kuhanja ne spusti na drugi narančasti
prsten kuhanja, te smanjiti dovod energije.
Kratka vremena su pri brzom kuhanju moguća
zbog toga što zbog pritiska pare u loncu vladaju
veće temperature:
Prvi prsten, oko 110 °C za osjetljiva jela,
kao riba ili kompot.
(45 kPa radni pritisak, 90 kPa podesivi tlak)
Drugi prsten, oko 119 °C za sva ostala jela.
(95 kPa radni pritisak, 130 kPa podesivi pritisak,
maksimalno 150 kPa)
Osobe koje štede energiju isključuju izvor topline
već prije završetka vremena kuhanja, jer je u loncu
sačuvana toplina dostatna za završetak procesa ku-
hanja. Vrijeme kuhanja može biti različito kod istog
jela jer količina, oblik i sastav namirnice mogu se
razlikovati.
4.5 Otvaranje lonca
Po isteku vremena kuhanja, lonac za brzo kuhanje
skinuti sa izvora topline. Po pravilu se poklopac
smije otvoriti i skinuti sa lonca tek kada je lonac
bez pritiska, tj signal kuhanja (1) u ručki mora pot-
puno nestati (I).
