Haringsalade
Voor 4 personen
400 g zoute haring filets
100g gekookte aardappelen
1 appel
50 g zure rode biet
1 augurk
Voor de dressing:
3 eetlepels appelcompote
1 eetlepel mosterd
Sap van 1 citroen
1 eetlepel kruidenazijn
1 eetlepel zonnebloemolie
Suiker
Zout
Zwarte peper
Ook:
4 eetlepels verse bieslook
Roggebrood en boter om te serveren
Voorbereiding
Week de haringfilets voor ongeveer 3 uur, laat ze dan uitlekken, dep ze droog en snij ze in grote
stukken. Schil de aardappelen. Schil en halveer de appel en boor hem uit. Snij beide met snijhulp-
stuk 2. Lek de rode biet en augurk uit en snij ze fijn bovenop de andere ingrediënten (snijhulpstuk
1). Voeg de stukken haring toe en meng goed.
Om de dressing te maken, combineer de appelcompote, de mosterd, de citroensap, de azijn en de
olie tot een egaal mengsel. Breng het geheel op smaak met suiker, een beetje peper en zout en giet
het over de salade. Meng alles goed; sluit de saladeschaal af met een vershouddeksel en laat het
ongeveer 30 minuten marineren. Roer dan weer en breng het indien nodig op smaak.
Was de bieslook en snij het in kleine stukjes. Strooi de bieslook bovenop de haringsalade en serveer
het geheel met roggebrood en boter.
