34. STOKVIS OP NOORSE WIJZE MET GEMENGDE NOTEN

Aanbevolen wijn : Fiano di Avellino
Ingrediënten voor 4 personen:
500 g geweekte Noorse stokvis
150 g gemengde noten (pijnboompitten, amandelen en walnoten)
80 g boter
1000 g nieuwe aardappelen
1 bos gewassen spinazie
4 laurierblaadjes
2 teentjes fijngehakte knoflook
olijfolie extra vierge
melk
zwarte peperkorrels en zout
Bereiding:
Laat de stokvis met de laurierblaadjes 5 minuten in de melk weken. Dep goed droog
met keukenpapier en verwijder de graten zonder de filets te beschadigen. Leg de vis
op de gril en besprenkel de filets met knoflookolie. Strooi er de grof gehakte noten
over evenals een klontje boter
Gril ongeveer 20 minuten en besprenkel af en toe met de overgebleven vloeistof om
te voorkomen dat de vis te droog wordt. Ondertussen kookt u de aardappelen in hun
geheel in de schil en geeft ze met de gekookte spinazie als bijgerecht bij de stokvis.
