21. GEGRILDE RUNDERLEVER MET SALIE EN VIN SANTO MARINADE

Aanbevolen wijn : Collio Goriziano Cabernet Franc
Ingrediënten voor 4 personen:
Stuk runderlever van 500 gr
½ liter verse volle melk
1 kop Vin Santo (Toscaanse dessertwijn)
7-8 blaadjes salie
2 eetlepels olijfolie extra vierge
1 takje rozemarijn
grof zout
Bereiding:
Leg de lever in een schaal. Snijd de salieblaadjes in stukjes en leg die met de
rozemarijn in de Vin Santo. Schenk het mengsel over de lever en zet afgedekt in de
koelkast gedurende 24 uur. Haal de lever uit het vocht en snijd de lever in 3-4 gelijke
stukken. Bestrooi met grof zout aan beide zijden en gril de lever medium rare ( de
kern alleen nog rood). Laat 2 minuten rusten op een schaal en snijd de lever dan in
plakken. Serveer de lever met gekookte groenten naar keuze.
