Ingrediënten voor 4 personen:
800 g kipfilet
2 courgettes
12 kerstomaatjes
± 20 plakken pancetta of bacon
6 grote champignons of Portobello’s
2 teentjes knoflook
2 takjes rozemarijn
2 blaadjes salie
8 eetlepel olijfolie extra vierge
peper en zout
Bereiding:
Snijd de kip in blokken en laat het gedurende enkele uren marineren in een kom met
de olijfolie, gehalveerde knoflooktenen en de aromatische kruiden. Roer het vlees af
en toe om. Snijd de uiteinden van de courgettes en snijd ze in plakken. Maak de
champignons schoon en halveer ze.
Vouw de plakken pancetta of bacon in de lengte dubbel. Haal de vleesblokken uit de
marinade en rol ze een voor een in een plak pancetta/bacon. Prik dan alle
ingrediënten: vlees, courgette, champignons en tomaatjes om en om op de spiesen.
Bak ze op een hete gril in 10-15 minuten gaar. Bestrijk ze met de marinade wanneer
ze helemaal gaar zijn en breng op smaak met peper en zout.
