17. VARKENSKARBONADES IN WITTE WIJNSAUS

Aanbevolen wijn : Salice salentino Pinot Bianco
Ingrediënten voor 4 personen:
16 varkenskarbonaadjes
12 onbehandelde sinaasappels
1 theelepel Maïzena
2 theelepels suiker
1½ dl droge witte wijn
40 g boter
peper en zout
Bereiding:
Schil 6 sinaasappels en pers ze. Haal de onder- en bovenkanten van de overige
sinaasappels en snijd deze dun. Bestrijk de karbonaadjes met een beetje boter en gril
ze 3 minuten aan een kant. Laat de boter smelten en strooi en wat sinaasappelschil
over de karbonaadjes en besprenkel met wat sinaasappelsap en wijn en laat nog 5
minuten grillen. Los de Maïzena op in een beetje koud water en voeg suiker, zout en
peper toe. Leg de karbonaadjes op een hete serveerschaal gegarneerd met schijven
sinaasappel. Breng indien nodig op smaak met zout en peper en laat heel even rusten.
Heet serveren.
