22. WORSTJES MET AARDAPPELEN

Aanbevolen wijn : Chianti (rode Toscaanse wijn), Collio Pinot noir (red,
Friuli-Venezia Giulia)
Ingrediënten voor 4 personen:
4 varkenssalami worstjes of
500 gr worstjes
4 grote aardappelen of 8 kleinere
olijfolie extra vierge
zwarte peper en zout
Bereiding:
Was en droog de ongeschilde aardappelen en snijd ze in plakken van minimaal 1,5
cm dik. Bestrooi ze met peper en zout en sprenkel er wat olijfolie over. Gril de
aardappelplakken 5-6 minuten per kant, totdat ze van binnen gaar zijn. Snijd de
salami in de lengte open en maak de worst wat zachter door er zachtjes in te knijpen.
Bak de worst wanneer het vel met een tandenstoker is ingeprikt gedurende 5-6
minuten aan beide zijden. Snijd de salami of worst in stukken van ongeveer 10- 12½
cm lang, prik het vel lek en leg ze op de grilplaat en bak gedurende 10 minuten
onder regelmatig keren totdat ze goud bruin zijn. Als de worstjes gaar zijn komt er
een heldere vloeistof uit de worst gelopen wanneer u er met een tandenstoker in
prikt. Serveer de worstjes direct aansluitend met de hete aardappel. Garneer de
schotel met takjes rozemarijn.
