GEGRILDE EEND OP KIP MET RODE CURRY:
Liefhebbers van curry zullen dit heerlijke Thaise gerecht een feest vinden!
Ingrediënten voor 4 porties:
Voor de currypasta:
2 eetlepels vissaus
1 eetlepel bruine suiker
3 stengels koriander, bovenste 2/3 deel en ontdaan van buitenste harde lagen
1-2 rode chilipepers, fijngehakt (of 2 theelepels Thaise rode chilisaus) of meer naar
smaak
2 teentjes knoflook
2 theelepels garnalenpasta
1 eetlepel gemalen koriander
2 eetlepels chilipoeder, of meer of minder naar smaak
½ theelepel gedroogde kurkuma
1 kop verse koriander, inclusief de steeltjes
1½ kop kokosmelk uit blik
4 kippen- of eendendijen, gegrild en kleingemaakt
3 kaffir limoenblaadjes
1 zoete rode peper of een rode paprika in stukjes
1 groene peper, gehakt
6 stuks rambutan fruit* (uit blik) of ananas, in hapklare stukjes gesneden
10-15 kerstomaatjes, heel (of 3-4 gewone tomaten in plakken gesneden)
1 kop verse korianderblaadjes, ongeveer 10 stengels
gestoomde Pandan rijst
Bereiding:
Doe alle ingrediënten voor de curry met ½ kop kokosmelk en de foodprocessor.
Mix goed.
Voeg dan de rest van de kokosmelk toe en meng nogmaals.
Schenk deze currysaus in een Orgreenic wokpan of grote koekenpan.
Voeg het gevogelte toe evenals de limoenblaadjes, peper/paprika, rambutan en
tomaten en roer goed door.
Doe deksel op de pan en laat 10 tot 20 minuten zachtjes koken, of totdat de curry
zachtjes borrelt en de groenten gaar zijn.
Haal van het vuur en roer er, indien gewenst, wat extra vissaus door.
Bestrooi met koriander en serveer met hete Pandan rijst.
* Rambutan is een helderrode, behaarde vrucht, nauw verwant aan de lychee.
