Orgreenic Receptengids Tel Sell

PIPIAN DE GALLINA:
Dit is een traditioneel Mexicaans gerecht, maar nu op Orgreenic wijze geserveerd.
Ingrediënten voor 4 porties:
1 hele gare kip (bot en vel verwijderd)
Voor de saus:
225 gr pompoenpitten zonder schil (pepita’s)
¼ kop geroosterd sesamzaad
¼ kop masa* bloem
2 teentjes knoflook
4 grote gedroogde rode of serrano chilipepers
2 eetlepels olijfolie of plantaardige olie
± 4 koppen kippenbouillon (zoutarm indien uit een pakje)
zout en peper naar smaak
maïs- of bloemtaco’s (optioneel)
Bereiding:
Snijd de kip in blokjes.
Laat in een grote Orgreenic koekenpan de masa met pompoenzaad, chilipeper en
knoflook in de olie bruinen. Doe het masamengsel in een food processor, blender
of een vijzel en maak er een pasta van.
Doe deze pasta terug in de pan en roer er voldoende kippenbouillon door om een
gladde saus te krijgen en laat zachtjes smoren totdat alles goed gemengd is.
Doe dan kip, zout en peper er bij en zorg dat de kip met de saus bedekt raakt en
laat nogmaals 10 minuten smoren en serveer direct aansluitend.
U kunt er maïs- of bloemtaco’s bij serveren.
*Masa bloem ofwel Masa Harina is gemalen, gedroogd graan dat in citroenwater
heeft liggen weken. In veel supermarkten verkrijgbaar en in alle Latijnse
kruidenierswinkels. Dit meel echter niet vervangen door tarwemeel, maïsmeel of
standaard meel aangezien dit zeker niet hetzelfde resultaat zal geven
