Carrot Cake
1. Place all the cake ingredients in a large Pyrex
®
bowl and mix well.
Spoon into tin.
2. Place tin on glass tray on wire shelf in the lower position and cook
on the Cake Auto Program (see page 69). Allow to cool.
3. To make the topping, in a small bowl, cream the butter and cream
cheese until smooth. Stir in sieved icing sugar.
4. Decorate the cooled cake with the cream cheese topping and
walnuts.

250 g wholemeal
self-raising our
2 tsp baking powder
2 tsp cinnamon
1 tsp nutmeg

50 g walnuts, coarsely

100 g chopped mixed peel
275 g plain our
225 g butter or margarine
225 g soft brown sugar
grated rind of one lemon

(8”), greased and lined.

Banana Loaf Cake
Dundee Cake
1. Peel the banana and mash until smooth with the vanilla essence.
2. Place the butter and sugar in a bowl. Place on the base of the
oven and heat on High Microwave for 1 minute or until soft. Stir
in the our, salt and bicarbonate of soda.
3. Beat in the eggs and mashed banana. Spoon into the prepared
cake tin.
4. Place tin on glass tray on wire shelf in the lower position and cook
on the Cake Auto Program (see page 69).
1. In a bowl, mix the chopped nuts, fruit, peel and our together.
2. In another bowl, cream the butter or margarine, sugar and lemon
rind until pale and uffy.
3. Beat in the eggs one at a time. Fold in the dry ingredients. Spoon
mixture into tin and hollow out the centre slightly.
4. Split the reserved almonds, and arrange on top.
5. Place tin on glass tray on wire shelf in the lower position and cook
on the Cake Auto Program (see page 69).
