Totale bereidingstijd: 130-140 minu

Ingrediënten voor ca. 4 personen:
1 eend (2000 g)
zout, peper, tijm
3 sinaasappels, geschild, in blokjes
2 appels, geschild, in blokjes
1 laurierblad
125 ml witte wijn
350 ml gevogeltebouillon (instant)
125 ml sinaasappelsap
maïzena
Voor het decoreren:
1 sinaasappel, ongeschild, in dunne
schijfjes gesneden
Bereiding
1. Kruid de voorbereide eend met zout,
peper en tijm. Vul de eend met de blok-
jes sinaasappel, appel en het
laurierblad.
2. Leg de eend met de borst omlaag in
een braadpan en braad het vlees onaf
-
gedekt. Keer de eend na de helft van
de bereidingstijd om. Voeg wat wijn en
bouillon toe en laat het vlees onafge
-
dekt gaar worden.
3. Haal de eend eruit. Voeg aan de
fond wijn, bouillon en sinaasappelsap
toe en bind het geheel met maïzena.
4. Snijd de eend in stukken. Garneer de
eend met de sinaasappelschijfjes.
Serveer het vlees met de saus.
