Totale bereidingstijd: 120-130 minu

Ingrediënten voor ca. 5 personen:
1 schenkel (1500 g)
zout, zwarte peper
40 g vloeibare boter
2 (100 g) wortels
100 g selderij
1 (50 g) ui
3 kruidnagels
250 ml heet water
1/2 bos peterselie
2 eetlepels zure room
maïzena
Bereiding
1. Spoel de schenkel af en dep het
vlees weer droog. Kruid de schenkel
met zout en peper. Bestrijk het vlees
met boter. Leg het vlees in de glazen
schaal of in een braadpan. Braad het
ca. 60 minuten.
2. Voeg de gereinigde en
kleingesneden groenten, de met
kruidnagels bestrooide stukjes ui, het
water en de peterselie toe. Braad het
geheel verder.
3. Voeg aan het braadvocht water en
zure room toe. Bind het vocht met voor

bereide maïzena.
