Jambon de Noël
Temps de préparation: 190minutes + 5heures pour la lixiviation

Ingrédients
3½kg de jambon avec couenne, sau-
muré, préparé
2œufs, calibreM | uniquement le jaune
2c.às. de fécule
2c. à s. de moutarde de Dijon, forte
2c. à s. de moutarde douce
1c. à c. de chapelure

Préparation
Placer le jambon dans un grand plat
avec de l'eau pendant env. 5heures
pour lixiviation.
Avec un couteau bien aiguisé, couper la
couenne en croix. Emballer le jambon
dans du papier aluminium, puis le pla-
cer dans un plat à rôtir Gourmet. Piquer
la thermosonde à travers le papier alu-
minium et enfourner le jambon.
Retirer le jambon et le laisser refroidir.
Retirer le papier aluminium et enlever le
dessus de la couenne. Préchauffer le
four conformément aux réglages.
Mélanger le jaune d'oeuf, la fécule et la
moutarde puis badigeonner le dessus
de la viande. Saupoudrer de chapelure
et faire gratiner le jambon.
