Zutaten
2 Hasenkeulen (Gesamtgewicht ca.
750g)
500ml Buttermilch
Salz
Pfeffer
6Wacholderbeeren
2Lorbeerblätter
50g Speck, fett oder durchwachsen, in
Scheiben
50ml Rotwein
100ml Sahne oder saure Sahne
150ml Wasser
Speisestärke
Zubehör
Gourmet-Bräter mit Deckel
Zubereitung
Hasenkeulen ca. 12Stunden in Butter-
milch legen, mehrmals wenden.
Häute entfernen, Keulen mit Salz und
Pfeffer würzen, mit Speckscheiben um-
wickeln und in den Gourmet-Bräter le-
gen. Wacholderbeeren und Lorbeerblät-
ter zufügen. Ca. 15Minuten zugedeckt
garen. Fleisch wenden, etwas Rotwein,
Wasser und Sahne zugeben und offen
zu Ende garen.
Bratenfond mit restlichem Rotwein,
restlicher Sahne und Wasser auffüllen,
mit angerührter Speisestärke binden.
Separat zum Fleisch servieren.
