3EL Buchweizengrütze
3EL Crème fraîche
1Eigelb
1kleine Zwiebel, fein gehackt
2EL Petersilie, gehackt
2EL Dill, gehackt

Pfeffer, weiß
Paprika
2EL Öl
1Knoblauchzehe
Zutaten Soße
125ml Sahne
125ml Brühe
3EL Soßenbinder, hell

Zubereitung
In die Putenbrust seitlich eine Tasche
einschneiden.
Für die Füllung Mascarpone mit Buch-
weizengrütze, Crème fraîche, Eigelb,
Zwiebel und Kräutern verrühren. Mit
Salz und Pfeffer abschmecken.
Diese Masse in die Fleischtasche ge-
ben. Mit Holzstäbchen oder Bindegarn
verschließen.
Die Knoblauchzehe mit etwas Salz zer-
drücken, mit Pfeffer, Paprika und Öl
vermischen. Das gefüllte Fleischstück
mit der Ölpaste gut einstreichen. In den
Gourmet-Bräter legen und offen garen,
zwischendurch wenden.
Den Bratenfond mit Sahne und Brühe
auffüllen, mit Soßenbinder binden und
zu dem in Scheiben geschnittenen
Fleisch servieren.
