1küchenfertige Pute (ca.3500g)
Salz
saure Sahne oder Crème fraîche
Speisestärke
Zutaten Füllung
30 ml Öl
3Zwiebeln, gewürfelt (150g)
125g Reis
150g Pistazienkerne
150g Rosinen
2EL Madeira
Zutaten Soße
125ml Sahne
125ml Brühe
3EL heller Soßenbinder
Zubehör
Kochtopf
Glasschale
Zubereitung
Den Reis garen. Den Madeira über die
Rosinen träufeln. Die gewürfelten Zwie-
beln in Öl andünsten. Reis, Pistazien-
kerne und Madeira-Rosinen zugeben
und gut vermischen.
Die Füllung in das vorbereitete Geflügel
geben. Pute außen mit Salz einreiben
und mit der Brustseite nach unten auf
die Glasschale legen.
Nach ca. 60Minuten wenden und mit
Fett begießen. Die Pute während des
Bratens alle 30Minuten mit ausgetrete-
nem Fond begießen.
Aus Bratenfond, Wasser, saurer Sahne
oder Crème fraîche und angerührter
Speisestärke eine Soße bereiten und
abschmecken.
