1300g Kaninchenrücken oder -keulen
Salz
Pfeffer, schwarz
3EL Dijon-Senf
100g Schinkenspeck, gewürfelt
30g Butter
1EL Mehl
2Zwiebeln, gewürfelt
250ml Weißwein
1TL Thymian, gerebelt
3EL Crème fraîche
Zubehör
Gourmet-Bräter mit Deckel
Zubereitung
Kaninchenteile mit Salz und Pfeffer
würzen und mit 2EL Senf bestreichen.
Speckwürfel im Gourmet-Bräter in der
Butter erhitzen, dann die Kaninchenteile
zugeben und auf der Kochstelle rund-
um anbraten. Mit Mehl bestäuben.
Zwiebelwürfel, Thymian und Wein zuge-
ben, offen im Garraum garen.
Fleischstücke entnehmen. Den restli-
chen Senf, Crème fraîche und eventuell
noch etwas Wasser oder Brühe zum
Bratenfond geben. Bratenfond mit an-
gerührter Speisestärke leicht binden.
