2000g Reh- oder Hirschrücken
1 ½–2l Buttermilch
8Wacholderbeeren
2Lorbeerblätter
3Pfefferkörner

30g Butter, flüssig
100g Speckscheiben, durchwachsen
125ml Rotwein
500ml Wasser
125g Crème fraîche oder saure Sahne
Speisestärke
6Birnenhälften
6TL Preiselbeerkonfitüre

Zubereitung
Reh- oder Hirschrücken von Häuten be-
freien. Rücken ca. 24Stunden in But-
termilch legen, mehrmals wenden.
Fleisch kalt abspülen, abtupfen. Mit
Salz und Pfeffer würzen, mit Butter be-
streichen und mit Speckscheiben bele-
gen.
In den Gourmet-Bräter legen, Wachol-
derbeeren und Lorbeerblätter zugeben,
zugedeckt ca. 15Minuten garen. Etwas
Rotwein, Wasser und Crème fraîche zu-
geben, offen weiter garen.
Bratenfond mit restlichem Rotwein,
Crème fraîche und Wasser auffüllen, mit
angerührter Speisestärke leicht binden
und zum ausgelösten Fleisch servieren.
Birnen leicht erwärmen, mit der Wöl-
bung nach unten um das Fleisch legen,
Preiselbeeren hineinfüllen.
