Berenjenas rellenas con Carne
Picada
Utensilios: Fuente con tapa (volumen 1 l)
Fuente poco profunda
(aprox. 30 cm de largo)
Ingredientes
250 g de berenjena
200 g tomates
1 Cdta. de aceite de oliva para untar el
molde
100 g cebollas, picadas
4 chiles verdes no muy picantes
sin semillas
200 g de carne de ternera picada
2 dientes de ajo, machacados
2 CuSop de perejil, picado
sal, pimienta
pimentón
60 g de queso Feta en dados
1. Cortar las berenjenas por la mitad
longitudinalmente. Sacar la carne con
una cucharilla dejando un borde de 1
cm de espesor aproximadamente.
Trocear la carne de la berenjena.
2. Retirar la piel de los tomates y picar.
3. Engrasar el fondo del recipiente con
aceite de oliva. Añadir las cebollas,
cubrir y cocinar.

4. Cortar los chiles en aros. Apartar una
tercera parte para adornar. Mezclar la
carne picada con la berenjena picada,
la cebolla y el tomate, los aros de chile,
el ajo y el perejil. Sazonar al gusto.
5. Secar las mitades de berenjena.
Rellenar con la mitad de la mezcla de
carne, esparcir el queso Feta por
encima y añadir el resto del relleno.
6. Colocar las mitades de berenjena en la
fuente, poner ésta en la rejilla inferior y
cocinar.
11-13 min. Dual Grill (630 W)
Adornar las mitades de berenjena con
los aros de chile y seguir cocinando.
4-7 min. Dual Grill (630 W)
Después de cocinar, dejar reposar
durante 2 min. aprox.
