Suppen / Minestre
Cremige Spargelsuppe
(für einen Dampfkorb)
Zutaten für 4 Portionen
500 g frischer Spargel

l Wasser
50 g Butter
20 g Mehl
2 Eigelb
6 EL Weißwein

l Sahne
Salz, Pfeffer, Muskat
Flüssigkeitsmenge im Bodengefäß:
maximale Füllstandsmarkierung

Den Spargel schälen, in Stücke
schneiden und im Dampfkorb 25 Minuten
garen.
2.
Dann in einem Topf auf dem Herd die
Butter zerlassen, das Mehl einrühren und
kurz durchschwitzen lassen.
3.
Die Mehlschwitze mit der Spargel -
brühe aus der Auffangschale und dem
Wasser ablöschen. Unter ständigem Rüh -
ren 5 Minuten köcheln lassen.
4.
Vom Herd nehmen und mit den zwei
Eigelben legieren.
5.
Weißwein und Sahne einrühren. Mit
Salz, Pfeffer und Muskat nach Geschmack
würzen. Die heißen Spargelstücke in die
Suppe geben und sofort servieren.
Wenn Sie wünschen: Mit frischen Schnitt -
lauchröllchen garnieren.
Crema di asparagi
(con una vaschetta di cottura)
(per 4 persone)
500 g di asparagi freschi
250 ml di acqua
50 g di burro
20 g di farina
2 tuorli d’uovo
6 cucchiai di vino bianco
250 ml di panna
Sale, pepe, noce moscata
Quantità di acqua da versare nella base:
fino al livello massimo

Pulite gli asparagi e disponeteli nella
vaschetta per la cottura a vapore. Cuocere
per 25 minuti.
2.
Scaldate il burro in una pentola,
aggiungete la farina e lasciatela
rapprendere, brevemente, mescolando
sempre, fino ad ottenere un composto
cremoso.
3.
Aggiungete l’acqua, insieme a del -
l’ acqua di cottura degli asparagi, che avre-
te prelevato dalla vaschetta raccogligocce,
per diluire il composto.
4.
Fate cuocere per 5 minuti mesco -
lando, quindi togliete dal fornello ed
aggiungete i tuorli.
5.
Versate nella pentola vino e panna
ed insaporite con sale, pepe e noce
moscata. Aggiungete gli asparagi ancora
caldi e servite immediatamente.
Suggerimento: Guarnire con cipolline
tagliate a rondelle.
