La cerveza se mantiene por aproximadamente 8 días desde la apertura del nuevo barril, pero puede variar en función de la marca o el tipo de cerveza utilizada.
Considerando el rápido y peligroso deterioro de la cerveza (formación de bacterias peligrosas) es necesario efectuar regularmente el lavado y desinfección de la
instalación.
Es preferible efectuar esta operación a cada cambio de barril o en todo caso a más tardar cada 15 días.
Una instalación con residuos de cerveza desprende malos olores y lleva a un gusto desagradable de la cerveza.
Una cerveza contenida en un nuevo barril, conectado a la instalación sucia, se contamina rápidamente en caso de presencia de bacterias y en todo caso da a la
cerveza un gusto desagradable incluso en el caso que estuviera conectada a un nuevo barril.
Proceder al lavado de la siguiente manera:

• Insertar en la conexión lavado V (Fig. 4) el alojamiento de la pastilla de lavado “W” (Fig. 5).
• Introducir una pastilla de lavado (leer atentamente las advertencias) en el asiento “W” (fi g.5) de la conexión de lavado “V” (fi g. 5). Ésta se disolverá al
paso del agua dejándola de color azul celeste).

• Cerrar el grifo (válvula) “O” (fi g. 6) y “S” (fi g.1).
• Tirar la leva de la válvula de desahogo “Z” (fi g. 7) hasta la completa salida del CO² residuo en el barril y en los tubos.

• Desenganchar la cabeza de tiraje mediante el accionamiento de la leva correspondiente (fi g. 8).
• Enganchar y bloquear la cabeza de tiraje a la conexión lavado “V” (fi g.9).
