Gratin
6 servings.
Ingredients:
4 aubergines
3 large onions
6 red tomatoes
2 cloves of garlic
salt, pepper, thyme
400 g Mozzarella cheese
olive oil

Preparation:
3’ Peel and finely chop the onions.
10’ Sauté the onions in a skillet with little olive oil, until golden.
Add the minced garlic, stir and set aside.
8’ Cut the aubergines lengthwise into thick slices.
Brown them on both sides in a non-stick frying pan. Set aside.
2’ Slice the tomatoes and keep to one side.
2’ Do the same with the Mozzarella cheese.
4’ In an oven dish, prepare the gratin by alternating layers of aubergines, onions, tomatoes,
and Mozzarella cheese. Every now and then sprinkle with salt, pepper, and thyme.
Finish off with a layer of aubergines topped with Mozzarella cheese.
Cooking method:
(35’-40’)* Select on the display the program “Aubergine au gratin”: the ideal temperature
and cooking time will appear automatically on the display.
Place the dish on the enameled baking tray, slide into an unheated oven on the second
shelf from the bottom.
Wine: Best served with a Rosso di Montalcino.

GRATIN DI MELANZANE
Almond
Puff Pie
8 - 10 servings.
Ingredients:
500 g puff pastry
125 g butter
125 g ground almonds
125 g castor sugar
1 whole egg + one for glazing
1 tablespoon flour
1 tablespoon dark rum
15’ - 20’
Preparation:
5' Roll out the puff pastry to form 2 round shells measuring about 26 cm in diameter.
3'-4’ Prepare the almond cream: blend all the ingredients (butter, ground almond, sugar,
egg, flour and rum) until soft and creamy. Let stand at room temperature.
3'-4' Line the enameled baking tray with oven paper and place one shell on tray.
Use a spatula to spread the almond cream evenly up to 2 cm from the shell rim.
2' Brush the shell rims with the beaten egg.
Cover with the second shell and seal the rims well.
3' Use a brush to glaze the top of the pie. Draw a pattern on the shell with the back
of a knife or fork. Make a hole in the centre of the top shell. Chill in the refrigerator
for 30 minutes.
Cooking method:
(30')* Select on the display the program “Almond Cake”: the ideal temperature and
cooking time will appear automatically on the display.
Wait for the oven to pre-heat: the display will show you the oven temperature.
Place the tray on second shelf from the bottom of the oven.
Wine: Best served with a Passito or Limoncello.
