Caramel
and Almond
Snowflake
8 - 10 servings.
Caramel Ingredients:
250 g sugar, 50 ml water
Snowflake Ingredients:
8 egg whites
250 g castor sugar
70 g icing sugar
15 g corn flour
150 g flaked almonds

Preparation:
10’ Prepare the caramel with the sugar and water. Pour it to cover the bottom of a 25cm
round Pyrex mould (with high sides). Arrange the almond flakes on top of the caramel.
5’ Whip the egg whites with the castor sugar until stiff. Sift the icing sugar with the corn
flour. Use a spatula to fold this mixture delicately into the whipped egg whites and
castor sugar. Pour the mixture into the mould and level it out with a spatula.
Cooking method :
(30’)* Select on the display the program “Snowflake”: the ideal temperature and cooking
time will appear automatically on the display.
Wait for the oven to pre-heat: the display will show you the oven temperature.
Stand the mould on the enameled baking tray.
Place the tray on the second shelf from bottom of the oven.
Allow to cool before turning over onto a serving dish.
Wine: Best served with a Vin Santo.

Cheese
Soufflé
4 - 6 servings.
Ingredients:
35 g butter
1 tablespoon flour
1 tablespoon potato flour
1/4 litre milk
salt, pepper, and nutmeg
5 eggs + 1 yolk
70 g grated Swiss cheese
20’ - 25’
Preparation:
2’ Grease and flour the mould and leave to chill in the refrigerator.
3’ In a saucepan, melt the butter.
2’ Mix the flour and the potato flour together, then add the mixture to the hot
butter and stir.
1’ Cook for 1 minute.
4’ Add the cold milk, mix well and bring to the boil. Season and let boil for 1 minute.
2’ Remove the saucepan from the heat, add the 6 egg yolks, one at a time.
2’ Add the grated Swiss cheese and stir to blend.
4’ Whip the 5 egg whites until barely stiff and fold them delicately into the cheese
mixture. Turn the mixture into the mould; stand the mould on the enameled baking tray.
Cooking method:
(25’-30’)* Select on the display the program “Souffle”: the ideal temperature and cooking
time will appear automatically on the display.
Wait for the oven to pre-heat: the display will show you the oven temperature.
Place the tray on second shelf from the bottom of the oven.
Serve at once.
Wine: Best served with a Sauvignon or Chardonnay
