Apulian-Style
Flat Loaf
6 - 8 servings.
Ingredients:
500 g flour
3 medium-sized potatoes (~ 150g)
1 level spoonful sugar
5 tablespoons olive oil (+1 for the mould)
20 g yeast, 10 g salt
2 red tomatoes
coarse salt, oregano
35’ - Rising time: 1 hour 45 minutes
Preparation:
20’ Peel the potatoes and cook them in salted water. Measure out 200 ml of the water
in which the potatoes were cooked and allow to cool slightly.
2’ Mix the flour, salt, and olive oil in a bowl.
2’ Use a potato masher to mash the potatoes and add them to the mixture in the bowl.
2’ Dilute the yeast in 200 ml of the water in which the potatoes were cooked and add
to the mixture.
4’ Mix well and knead for a couple of minutes until the dough is thoroughly blended.
1h Cover the bowl with plastic wrap and let the dough rise for about 1 hour.
1’ Knead the dough again for about 1 minute.
2’ Grease a cake tin with oil and turn the dough into the tin, spreading it out.
3’ Cut each tomato into 12 wedges and insert them into the dough.
1’ Sprinkle with coarse salt and oregano.
45’ Let rise again for about 45 minutes.
Cooking method:
(25’)* Select on the display the program “ Flat Loaf Bread”: the ideal temperature and
cooking time will appear automatically on the display.
Wait for the oven to pre-heat : the display will show you the oven temperature
Stand the mould on the enameled baking tray and place in the oven on the second
shelf from the bottom. Allow to cool before serving.
Wine: Best served with a Pinot Grigio.

program: the time and temperature will automatically be set.
The display gives you constant information about the oven’s functioning,
so that you can intervene manually at any time during the cooking to
customise the recipe.
Please remember to read the whole recipe till the end - it may sound
like a silly suggestion, yet it often happens that one reads only three
quarters of the recipe and finds out that one important tool or ingredient
is missing.
Choose the cooking pans very carefully. See below the information
