Aubergine and Leek Au Gratin: a mould with 25-28 cm of diameter.

“Island-Style”
Foil-Wrapped
Sea Breams
4 servings.
Ingredients:
4 serving-size sea breams
1 onion, 1 clove of garlic, 50 g grated coconut
50 g whole, peeled almonds
200 ml coconut milk,
100 ml pineapple juice
juice of 1 lemon
salt, Cayenne pepper

Preparation:
10’ Scale the fish, remove the entrails and rinse.
Dry the fish well and store in a cool place.
5’ Put all the ingredients in a mixer and process until the mixture is thoroughly
blended.Taste, and season as necessary.
10’ Place two large sheets of aluminum foil one on top of the other on your work surface.
Put one spoonful of the mixture on the foil. Arrange one fish on the mixture and then
top with other two spoonfuls of mixture. Fold the foil over and seal the wrap carefully,
folding the edges over several times. Place the wrapped fish on the enameled baking
tray. Repeat the same procedure for each fish. (2 wraps on the enameled baking tray
and 2 wraps on the rack).
Cooking method:
(25’)* Select on the display the program “Sea breams in foil”: the ideal temperature and
cooking time will appear automatically on the display.
Wait for the oven to pre-heat: the display will show you the oven temperature.
Place the enameled baking tray on first shelf and the rack on third shelf from the bottom.
Serve at once. Serving suggestion: serve with lavishly-buttered basmati rice on the side.
Wine: Best served with a Pinot Grigio.
