Salmone al vapore
Ingredienti per 4 persone:
600-800 g di filetto di salmone (senza pelle)
3 limoni non trattati
2 spicchi d’aglio
1 mazzetto di prezzemolo
4 scalogni a cubetti
2 cucchiai di Vermut secco
100 ml di vino bianco
150 ml di fondo di cottura di pesce
Insaporire il salmone con sale e pepe. Togliere completamente la parte bianca della
buccia del limone e tagliare a fette. Tagliare a fettine gli spicchi d’aglio, tritare il
prezzemolo e distribuirli insieme alle fette di limone sul filetto di salmone. Posare il
filetto di salmone sull’inserto.
Sciogliere 40 gr. di burro nella rostiera e farvi stufare lo scalogno. Aggiungere Vermut,
vino bianco e fondo di cottura e bollire.
Porre l’inserto con il filetto di salmone nella rostiera e cuocere in forno con il coperchio
a 200 gr. per ca. 10 minuti.
Togliere il filetto di salmone e tenere al caldo. Far bollire brevemente il fondo di cot-
tura e se necessario far addensare .
Per arricchire il filetto di salmone, a piacere aggiungere erbette aromatiche fresche.
