Coloque la cazuela llena de 800 ml de aceite

Caliente la materia grasa o el caldo alrededor

Si alrededor del palo ascienden pequeñas
burbujas, se habrá alcanzado la temperatura
correcta.
El caldo no debería hervir a borbotones, sino
bullir silenciosamente. Si es preciso, bajar un
poco la tempe-ratura.
