31. GEGRILDE OCTOPUS

Voorbereidingstijd : 45 minuten
Bereidingstijd : 15 minuten (kooktijd) en 10 minuten (griltijd)
Aanbevolen wijn : Fiano di Avellino
Ingrediënten voor 4 personen:
2 octopussen van elk 1 kg
2 eetlepels gedroogde, gekneusde oregano
1 citroen
enkele takjes gedroogde hele oregano
1 dl olijfolie extra vierge
peper en zout
Bereiding:
Maak de inktvis zorgvuldig schoon onder stromend water. Kook de inktvis in een
ruime hoeveelheid gezouten water gedurende 15 minuten en laat ze dan afkoelen in
het kookvocht. Laat ze dan uitlekken en snijd ze met een schep mes in dikke stukken
en leg die in een schaal.
Maak een marinade van de olie, snufje zout en peper en de gekneusde oregano.
Meng goed en schenk het over de inktvis. Dek af met plastic en laat in de koelkast
minstens 30 minuten rusten. Haal na de 30 minuten de inktvis uit de marinade en
gril de octopus 4 minuten aan beide zijden op een hete gril, besmeer indien nodig
met de achtergebleven marinade. Haal de inktvis met behulp van een tang van de
gril. Garneer de inktvis met wat citroensap en de takjes oregano. Direct serveren.
