• Doe nu en rode en groene paprika in de pan en bak ongeveer 6 minuten onder af

en toe roeren.

• Doe de sofrito nu in de koekenpan samen met de rijst en kook 1 minuut, roer

goed door zodat alle rijstkorrels goed bedekt zijn.

• Voeg de hete bouillon toe, evenals saffraan en zout en peper en roer goed door

elkaar.

• Breng aan de kook.

• Laat 10 minuten zachtjes koken zonder deksel en zonder te roeren.

• Temper het vuur en laat het geheel, zonder te roeren, heel zachtjes nog 15

minuten koken.

• Om de socorrat te maken draait u het vuur naar middelhoog en laat 1 minuut

goed koken totdat u ruikt dat de rijst onder op de bodem begint te roosteren.

Haal dan de pan van het vuur.

• Voeg de weggezette garnalen, mosselen en inktvisringen aan de rijst toe en strooi

er de erwten over heen.

• Dek de pan af en laat de paella nog 5 minuten rusten.

• Serveer vervolgens met citroenpartjes.
