Orgreenic Receptengids Tel Sell

RATATOUILLE:
Een geliefd Frans boerengerecht waar je gegarandeerd warm van wordt op een
koude dag.
Ingrediënten voor 4 porties:
± 450 gr stevige, rijpe tomaten
+ 450 gr aubergine, geschild in 7,5 cm lange repen gesneden
± 450 gr courgette, in ronde plakken gesneden (niet schillen)
4 eetlepels olijfolie (optioneel), slechts voor de smaak
± 225 gr gele ui, in plakken gesneden
1 paprika, in repen gesneden
2 teentjes knoflook, geplet
zout en peper naar smaak
3 eetlepels gehakte, verse gemengde kruiden: rozemarijn, bonenkruid, peterselie, tijm
en lavendel
Bereiding:
Dompel de tomaten 30 seconden in kokendheet water.
Haal ze eruit en verwijder schil en zaadjes.
Snijd het vruchtvlees in stukjes en zet apart.
Bak aubergine en courgette in een grote Orgreenic koekenpan met wat olijfolie
(indien gewenst) op middelhoog vuur gedurende 10 minuten.
Haal de groenten uit de pan en zet apart.
Bak nu de ui en paprika in dezelfde pan gedurende 10 minuten op middelhoog
vuur.
Roer de knoflook erdoor en breng op smaak met peper en zout.
Leg de tomaat bovenop de ui in de pan.
Doe de deksel erop en laat op laag vuur gedurende 5 minuten smoren.
Sprenkel 1 eetlepel verse kruiden over het mengsel.
Leg nu de aubergine en courgette op de tomaat.
Strooi daar weer een eetlepel verse kruiden over.
Doe deksel weer op de pan en laat op laag vuur nog 10 minuten smoren.
Voeg indien nodig zout en peper naar smaak toe evenals de rest van de kruiden.
Laat dan nog 20 minuten smoren zonder deksel.
