IZBOR SESTAVIN ZA KRUH
Kvas: Kruh se pripravlja z uporabo pekovskega kvasa. Takšen kvas se
prodaja v številnih oblikah: kot majhne kocke stisnjenega kvasa, aktiven
suhi kvas, ki ga je treba namočiti, ali instant suhi kvas. Kvas se prodaja
v supermarketih (na oddelku pekarne ali svežih živil), pri peku pa lahko
kupite tudi stisnjeni kvas.
Kvas lahko skupaj z ostalimi sestavinami neposredno vmešate v pekaču ali
pa ga dodate v dozirnik za kvas (velja samo za instant suhi kvas). Stisnjeni
kvas z roko dobro razdrobite, da se bo tako lažje vmešal v testo.
Upoštevajte priporočene količine (glejte spodnjo tabelo primerjave).

Moka: Če v receptu ni drugače navedeno, je priporočena uporaba
moke T55. Kadar uporabljate mešanice posebnih vrst moke za kruh,
brioše ali mlečni kruh, skupaj ne smete pripraviti več kot 750 g testa
(moka + voda).
Končni rezultat se lahko razlikuje tudi zaradi razlike v kakovosti moke.
Moko hranite v hermetično zaprti posodi, saj reagira na nihanje razmer v
prostoru (vlažnost). Če boste testu za kruh dodali oves, otrobe, pšenične
kalčke, rž ali cela zrna, bo nastal kruh, ki bo bolj gost in manj puhast.
Večji delež polnozrnate moke, to je moke, ki vsebuje zunanjo plast
pšeničnega zrna (T>55), pomeni, da bo kruh manj vzhajal in bo gostejši.
V trgovinah so na voljo tudi že pripravljene mešanice za kruh. Pri uporabi
teh mešanic upoštevajte navodila proizvajalca.
Moka brez glutena: Uporaba velikih količin tovrstne moke kar kliče
po uporabi programov za pripravo kruha brez glutena. Obstaja veliko
vrst moke, ki ne vsebujejo glutena. Najbolj znane so ajdova moka, riževa
moka (bela ali polnozrnata), kvinojina moka, koruzna moka, kostanjeva
moka, prosena moka in sirkova moka.
Če želite pri pripravi kruha brez glutena poustvariti elastičnost glutena,
je ključnega pomena, da uporabite več vrst moke, ki ni namenjena za
pripravo kruha, in dodate sredstva za zgoščevanje.
