RECEPTEN
EENVOUDIGE OSSO BUCCO
Voor 4 porties
Ingrediënten
6 x 4 cm dikke osso bucco schijven (van kalfsschenkel)
2 eetlepels meel
2 eetlepels olijfolie
1/3 cup witte wijn
400 g gepelde tomatenstukjes uit blik
2 theelepels suiker
zout en vers gemalen peper
Voor de gremolata:
4 teentjes knoflook, fijn gehakt
Fijn geraspte citroenschil
1/2 cup vers gehakte peterselie
Bereiding
1. Druk op de SAUTÉ/SEAR knop en dan op de START/CANCEL knop. Verwarm met
de deksel gesloten de uitneembare kookpan gedurende 3 minuten.
2. Verwijder de deksel, voeg de olie toe en verwarm deze 1 minuut.
3. Paneer de osso bucco stukken in meel en klop het overtollige meel af. Bak ze
vervolgens in kleine hoeveelheden, totdat ze iets gebruind zijn. Haal ze er ver-
volgens uit en leg ze aan de kant.
4. Voeg de wijn toe en laat het geheel 1 – 2 minuten koken. Roer het geheel goed
door, ook op de bodem van de kookpan.
5. Voeg dan de osso bucco stuken weer toe en doe ook de tomatenstukjes, de sui-
ker, het zout en de peper in de kookpan.
6. Sluit de deksel weer. Druk op de SLOW COOK LOW knop en laat het geheel 6 – 7
uur koken. Activeer het kookproces door de START/CANCEL knop in te drukken.
7. Serveer de osso bucco besprenkelt met een gremolata van bovenstaande in-
grediënten.
