Bagepapir
Tilberedning:
Rør 50 g mandler, 140 g mel, 40 g sukker, 1 æggeblomme, 100 g koldt smør i stykker og lidt salt
sammen vha. dejkrogen på en røremaskine, ælt derefter hurtigt blandingen til en glat dej med
hænderne.
Form dejen til en kugle, vikl den ind i plastfolie og anbring den et koldt sted i ca. 1 time. Læg
bagepapir på bagepladen (10), og forvarm bageovnen i ca. 10 minutter på 200 °C over-
/undervarme. Form dejen til 2 ruller (hver især: Ø ca. 1,5 cm) på en arbejdsflade, som er drysset
med mel. Skær derefter rullerne i hver især 15 små stykker (med ca. 3 cm længde). Form de
enkelte dejstykker til ca. 8 cm lange ruller og bøj dem til små horn, tryk enderne sammen i en spids.
Bag småkagerne på midterste niveau (2) i 12 minutter. Bland flormelis og vaniljesukker og strø
blandingen på de varme småkager vha. en sigte. Lad derefter småkagerne køle af i ca. 30
minutter.
Æblekage efter østrigsk opskrift
Ingredienser:
150 g butterdej
1 stort æble
1 spsk. vaniljesukker
1/2 spsk. sukker
25 g mandelflager
1 stænk citronsaft
1 æggeblomme
1 tsk. mælk
Tilberedning:
Skræl æblet og fjern kernerne. Skær æblet i små stykker, og sprøjt citronsaft på stykkerne, så de
ikke bliver brune. Tilsæt sukker, vaniljesukker og mandelflager, og rør det hele godt sammen.
Rul butterdejen ud i en rektangel, eller brug en færdig udrullet butterdej fra supermarkedet. Fordel
blandingen på dejen. Forvarm bageovnen i 10 minutter på 200 °C over-/undervarme.
Bland ægget og mælken, og strø blandingen på butterdejens kanter. Vikl butterdejen sammen, de
overlappende rande skal trykkes let sammen og vendes. Skær små aflange ridser foroven i
butterdejen, så den ikke brister under bagningen. Luk enderne ordentligt, og tryk dem fast sammen,
så fyldet ikke kan løbe ud. Smør ægge-mælke-blandingen på hele butterdejen, som skal bages i ca.
30 minutter i ovnen. Den varme kage smager ekstra lækkert sammen med varm vaniljesovs eller en
kugle is.
