Programma 10: Impasto
Panini alla crusca
200 ml acqua 50 g burro/margarina
1 uovo ¾ cucchiaino di sale
3 cucchiai zucchero 500 g farina di frumento (tipo DE 1050)
50 g crusca di frumento 1 confezione di lievito secco (7 g)
Baguette "alla francese"
300 ml acqua 1 cucchiaio di miele
1 cucchiaino di sale 1 cucchiaino di zucchero
540 g farina di frumento (tipo DE 550) 1 confezione di lievito secco (7 g)
Formare delle pagnotte (baguette) a partire dall'impasto finito e intaccarne la superficie con dei
tagli obliqui. Lasciar lievitare l'impasto per circa 30-40 minuti sulla teglia, dopodiché cuocere in
forno a 175°C per circa 25 minuti.
Brezel
200 ml acqua ¼ cucchiaino di sale
½ cucchiaino di zucchero 360 g farina di frumento (tipo DE 405)
½ confezione di lievito secco (3,5 g)
Attenzione: con l'impasto finito modellare dei brezel (ciambelle salate tedesche con la tipica forma
a 8). Spennellare i brezel con un uovo sbattuto e quindi cospargerli di sale grosso (2 cucchiai di
sale grosso per 12 brezel). Posizionare i brezel su una teglia già preparata e cuocere in forno a
230°C per 15-20 minuti.

5 uova (a temperatura ambiente)
250 g farina di grano tenero (tipo DE 405)
250 g farina di grano duro (tipo DE 1050)
Pasta
300 ml acqua
250 g farina di grano tenero (tipo DE 405)
250 g farina di grano duro (tipo DE 1050)
