9.5 Hrachový guláš
4 porcie
Ingrediencie:
1,8 l zeleninového vývaru (teplého)
500 g lúpaný hrášok (nelúpaný hrášok sa
musí namočiť na 12 hodín dopredu!)
20 g bravčovej masti
150 g bravčového bôčika
2 cibule, jemne nakrájané
100 g zeleru, nakrájaného na kocky
1 pór, nakrájaný na kocky
2 mrkvy, nakrájané na kocky
300 g zemiakov (múčnaté), nakrájané na
kocky
1/2 zväzok čerstvého petržlenu,
nakrájaného na kocky
1 čaj. lyžička sušeného majoránu
1-2 čaj. lyžičky soli
Čerstvo namleté čierne korenie
4 párky, narezané na kolieska
Postup:
Umyte a na kocky nakrájajte zeler, mrkvu a pór. Oškrabkajte zemiaky a nakrájajte ich na rovnako veľké
kocky. Olúpte a nakrájajte cibule najemno.
Nakrájajte bravčový bôčik na malé kúsky.
Na panvici roztopte masť, pridajte bravčový bôčik a osmažte do zlatohneda. Pridajte cibule, zeler, pór a
mrkvu. Rýchlo osmažte zeleninu.
Nastavte pomalý hrniec do polohy LOW a pridajte do neho osmaženú zeleninu, cibule a bravčový bôčik.
Pridajte nakrájané zemiaky a hrach a zalejte teplým vývarom.
Pridajte sušený majorán. Dobre premiešajte a zatvorte sklenené veko (2).
Po približne 5 hodinách pridajte nakrájané párky (alebo po približne 4 hodinách v polohe HIGH).
Prípadne po 6 hodinách varenia pridajte klobásy a nechajte variť ďalších 30 minút.
Okoreňte guláš soľou a čiernym korením a tesne pred podávaním pridajte jemne nakrájaný petržlen.
9.6 Toskánsky bravčový guláš
4 porcie
Ingrediencie:
500 g bravčového mäsa
1 balená slanina
400 ml smotany na šľahanie
1 konzerva rajčinového pretlaku
1 konzerva nasekaných rajčín
2 strúčiky cesnaku
3-4 pol. lyžice rajčinového kečupu
2 čaj. lyžička masla
2 čaj. lyžičky sladkej papriky
Štipka kajánskeho korenia
1/2 čaj. lyžičky sušeného rozmarínu
1/2 čaj. lyžičky sušeného tymianu
1/2 čaj. lyžičky sušenej bazalky
Soľ a čerstvo namleté čierne korenie
