Riso al Pistacchio con Fragole

Utensile: Terrina con coperchio (2 litri)
Ingredienti
125 g riso a grana corta
150 ml latte
175 ml acqua
1 stecca di vaniglia
1 snufje sale
50 g zucchero
250 g fresas
40 g zucchero
40 ml Cointreau (liquore all’arancia, 40 Vol. -%)
200 ml panna
1 clara de uovo
50 g pistacchio
Procedimento
1. Mettere il riso nel contenitore e aggiungere il latte e
l’acqua. Unire al riso la stecca di vaniglia, dopo
averla aperta, il sale e lo zucchero, coprire e cuocere,
mescolando una volta durante la cottura.
1. 3 - 5 min. 100 %
2. 24 - 26 min. 30 %
Lasciare riposare per 5 minuti dopo la cottura.
2. Tagliare a metà le fragole e mescolarle con lo
zucchero e il Cointreau.
3. Togliere la stecca di vaniglia e far raffreddare il riso
sotto un getto di acqua fredda, rimescolando.
Montare separatamente la panna e l’albume d’uovo.
Unire al riso il pistacchio, quindi la panne e infine
l’albume a neve.
4. Disporre il riso in un piatto largo e formare al centre
un buco per le fragole.

Ingredienti
4 pere (600 g)
60 g zucchero
1 bust. zucchero vanigliato (10 g)
1 CM liquore alla pera, 30 Vol.-%
150 ml acqua
130 g cioccolato fondente
100 g panna liquida
Procedimento
1. Sbucciare le pere, lasciandole intere.
2. Versare l’acqua con lo zucchero, lo zucchero
banigliate e il liquore nella terrina, mescolare, coprire
e scaldare.
1 - 2 min. 100 %
3. Immergervi le pere e continuare la cottura sempre
con il coperchio.
5 - 8 min. 100 %
Togliere le pere dal liquido di cottura e far
raffreddare.
4. Versare 50 ml del liquido di cottura nella terrina più
piccola. Aggiungere il cioccolato spexxettato e la
panna, coprire e scaldare.
2 - 3 min. 100 %
5. Mescolare accuratamente, versare sulle pere e servire.
Consiglio:
Servire insieme alla pere una pallina di gelato alla
vaniglia.
