Tempo di cottura 25 - 29 minutos
Utensile: Teglia rettangolare (circa 25x11x9 cm)
Ingredienti
25 g lievito fresco
1 CU zucchero
250 ml acqua tiepida
500 g farina de trigo
1 CU sale
15 g burro
1 CU burro per ungere la teglia
1 tuorlo d’uovo
1 CM acqua
Procedimento
1. Sciogliere il lievito e lo zucchero nell’acqua tiepida.
2. Mescolare la farina e il sale in una grossa terrina,
formare un buco al centro e versarvi l’acqua con il
lievito. Aggiungere un po’ di farina. Unire il burro a
pezzetti e impastare il tutto fino a ottenere un
impasto omogeneo.
3. Coprire la terrina con un ascuigamano e far lievitare
al caldo per 30 minuti.
4. Impastare nuovamente la pasta e collocarla nella
teglia imburrata.
5. Coprire e lasciare ancora lievitare al caldo per circa
15 minuti, fino a che no sia raddoppiata la massa.
6. Mescolare il tuorlo d’uovo con un cucchiaio d’acqua.
Fare un taglio longitudinale sul pane e spennellare
con il tuorlo d’uovo.
7. Colocare la teglia sulla griglia bassa del forno.

2. 7 - 9 min. 200˚ C

Utensile: Teglia per pizza
(diametro circa 30 cm)
Ingredienti
100 g farina di segale
550 g farina (tipo 550)
100 g semi di lino
100 g semi di sesamo
60 g lievito fresco
1/2 L acqua
1 CM sale
Procedimento
1. Unire gli ingredienti, preparare l’impasto e far
lievitare per circa 30 minuti.
2. Ungere leggermente la teglia e spolverare di farina.
3. Impastare nuovamente la pasta e darle una forma
allungata. Collocare il pane sulla teglia, coprire e
lasciare riposare per altri 30-40 minuti. Preriscaldare
il forno a 230° C.
4. Spennellare il pane con un po’ d’acqua e
punzecchiare più volte con una forchette.
5. Cuocere sulla griglia bassa del forno preriscaldato.
(La ricetta è per una torta di circa 1,3 kg)
