450g (1 lb) seville oranges
1 lemon
900 ml (1½ pts) water
450g (1 lb) sugar
knob of butter

Orange Marmalade
Grate oranges and Oemon ensuring aOO the pith is Oeft on the fruit. Set
the rind aside. POace the peeOed fruit in a food processor and chop
untiO the pips are broken. POace the chopped mi[ture in a Oarge bowO
and pour over the boiOing water. &over and cook on +,G+ power for
10 mins. Strain the mi[ture through a sieve into another Oarge bowO
pressing the puOp weOO untiO aOO the Muice is e[tracted. 'iscard the puOp.
Stir the shredded rind into the hot Muice and cook uncovered on +,G+
power for 10 mins untiO rind is tender, stirring occasionaOOy. Stir in the
sugar untiO dissoOved. &ook on +,G+ for mins covered. Stir in the
butter and cook for 50 mins or untiO setting point. Leave to stand for
10 mins then pour into warmed steriOized Mars.

'o not doubOe this recipe because it wiOO boiO over.

thick with no e[cess OiTuid. Leave to stand covered for 10 mins then stir
and pour into steriOised Mars. &over and OabeO.
