Caçarola de frango e cogumelos
8 pedaços de frango cortados
em quartos
75g manteiga
3 colheres de sopa farinha
2 cebolas grandes, cortadas
aos bocadinhos
3 aipo picado
500g cogumelos laminados
2 dentes de alho, esmagados
1 litro caldo de galinha
Sal e pimenta preta acabada de moer
7 colheres de sopa natas (opcional)
Envolva o frango em farinha,
coloque numa frigideira e frite com
a manteiga até alourar de todos os
lados. Adicione a cebola e o aipo e
frite ligeiramente até amolecer, mas
sem alourar. Adicione cogumelos e
alho e adicione o caldo, mexendo-
o. Deixe ferver e tempere. Transfira
todos os ingredientes para o
recipiente de cerâmica e coloque-o
na unidade base. Coloque a tampa
na panela eléctrica digital de
cozedura lenta. Assegure-se de que
o frango e os vegetais ficam
imersos. Deixe cozinhar durante
aproximadamente 5 a 7 horas.
Antes de servir, adicione as natas,
mexendo-as.
Fricassé de Peru
8 pedaços de peru
2 cebolas grandes, cortadas
aos bocadinhos
75g manteiga
225g cogumelos laminados
Bouquet garni
Raspa de limão
Sal e pimenta preta acabada de moer
1 litro de caldo
5 colheres de sopa farinha maisena
9 colheres de sopa leite
Numa frigideira, frite ligeiramente as
cebolas na manteiga até amolecer
mas sem alourar. Corte o peru aos
cubos e coloque na frigideira.
Adicione todos os ingredientes
restantes, excepto o leite e a farinha
de milho, e deixe ao lume.
Transfira todos os ingredientes para
o recipiente de cerâmica. Coloque o
recipiente de cerâmica na unidade
base da panela eléctrica. Coloque a
tampa sobre a panela eléctrica.
Deixe cozinhar durante
aproximadamente 4 a 6 horas.
Retire o bouquet garni e limão meia
hora antes de servir. Verta o líquido
para uma frigideira. Misture a
farinha de milho com leite e verta
para uma frigideira, mexa bem e
deixe engrossar.
