Choux à la crème
Temps de préparation: 80minutes

250(375)ml d'eau
50 (75)g de beurre
1 (2)pincée(s) de sel
170(225)g de farine de blé, type45
4(6)œufs, calibreM
1(1½)c.àc. de levure chimique

son multi-usages
Préparation
Faire bouillir l'eau, le beurre et le sel
dans une casserole.
Retirer la casserole du feu. Verser la fa-
rine sur le liquide en ébullition et remuer
sans interruption jusqu'à former une
boule. Laisser la pâte «accrocher» à
feu vif en mélangeant jusqu'à ce qu'une
couche blanche se forme au fond de la
casserole.
Verser dans un saladier. Incorporer les
œufs un à un jusqu’à ce que des
pointes molles et luisantes sortent de la
boule de pâte lorsqu’on y plante une
cuillère et qu’on la retire de la boule.
Enfin, incorporer la levure chimique.
Verser la pâte dans une poche à douille.
Former des petites boules sur la
plaque. Faire dorer au four.
Après cuisson, couper immédiatement
les choux dans le sens de la largeur,
puis laisser refroidir. S’il reste de la pâte
non cuite, l’enlever.
