Pour la pâte
130g de chocolat, noir
140g de beurre
110g de sucre glace
8g de sucre vanillé
6œufs, calibre M
1 pincée de sel
110g de sucre
140g de farine de blé, type45
1c.àc. de levure chimique
Pour le nappage
200g de confiture d'abricots
Pour le glaçage
200g de sucre
125ml d’eau
150g de chocolat, noir
Accessoires
Chinois, fin
Grille
Moule à manqué, 24cm
Papier sulfurisé
Préparation
Faire fondre le chocolat noir.
Mélanger le beurre et le sucre glace
jusqu'à obtention d'un mélange cré-
meux.
Séparer les blancs des jaunes. Incorpo-
rer les jaunes d'œufs. Incorporer le cho-
colat.
Tamiser la farine et mélanger avec la le-
vure chimique. Monter les blancs en
neige avec le sucre et le sel. Incorporer
tour à tour le mélange de farine et le
blanc d'oeuf à la pâte
Enfourner la grille. Démarrer le pro-
gramme automatique ou préchauffer le
four.
Tapisser le moule à manqué de papier
sulfurisé et verser la pâte à l'intérieur.
Enfourner le pain et le faire cuire.
Laisser refroidir le fond de tarte. Pen-
dant ce temps, réchauffer la confiture
d'abricots et la faire passer au tamis.
Découper le fond de tarte, étaler la
confiture d'abricots en fines couches
sur les surfaces découpées et les cô-
tés.
Pour le glaçage, faire chauffer le mé-
lange sucre-eau, ajouter le chocolat et
faire fondre.
Répartir uniformément le glaçage au
chocolat sur la Sachertorte.
