1kg varkensvlees (bovenbil of frican-
deau), panklaar

250ml groentebouillon

300ml water
250ml groentebouillon
100g crème fraîche
2theelepels maïzena
1eetlepel water | koud

Braadslede met deksel
Bratometer
Bereiding
Meng de mosterd, het zout, de peper en
het paprikapoeder en bestrijk daarmee
het varkensvlees.
Start het automatische programma of ver-
warm de oven voor.
Verhit olie in de braadslede en braad het
varkensvlees aan alle kanten aan. Blus
het geheel af met ¼l groentebouillon.
Steek de bratometer erin. Schuif de
braadslede in de oven. Laat de beenham
afgedekt garen.
Verwijder het deksel na 55minuten en
laat de beenham doorgaren.
Verwijder het varkensvlees. Los het
braadvocht op in water en groente-
bouillon. Voeg de crème fraîche toe en
breng het aan de kook. Vermeng de
maïzena met water en bind de saus
daarmee. Breng het opnieuw kort aan
de kook. Breng op smaak met zout, pe-
per en suiker.
