Voor de kalfsschenkel
2eetlepels olie
1½theelepel zout
½theelepel peper
1kalfsschenkel (à1,5kg), panklaar

80g selderij
1eetlepel tomatenpuree
800ml kalfsfond
200ml water
Voor de saus
75g room
1½eetlepel maïzena
2eetlepels water | koud

Bereiding
Roer de olie, het zout en de peper door
elkaar en bestrijk de kalfsschenkel er-
mee.
Snijd de ui in vieren en steek de kruid-
nagel erin. Schil de selderij en de wor-
tels en snijd ze in grove blokjes.
Doe de groente, tomatenpuree en kalfs-
schenkel in de braadslede. Steek de
bratometer erin. Schuif de braadslede
in de oven en laat het vlees braden.
Voeg na 50minuten de helft van de
fond en de helft van het water toe. Voeg
na 30minuten de andere helft van de
fond en het water toe.
Verwijder de kalfsschenkel en de groen-
te. Haal de kruidnagel uit de ui.
Doe de groente en het braadvocht in
een pan en pureer dit. Doe de puree
door een zeef, giet er de room bij en
breng het aan de kook.
Vermeng de maïzena met water en bind
de saus daarmee. Breng het opnieuw
kort aan de kook. Breng op smaak met
peper en zout.
